It took almost a year from first try to where it is now. I knew cherries would be hard, but I didn't expect waffles to be this hard.

This is based on a dessert you can get in Germany called "Bergische Waffel". Compared to belgian waffles, these waffles are softer and thinner. They are also made without yeast and oddly closer to pancakes than their belgian counterparts. Just with a lot more butter. You can get them with a couple of different toppings but the classic is powdered sugar, cherry compote, whipped cream and/or vanilla ice cream. Feeling adventurous? Get one with rice pudding, trust me.

For this one I skipped the rice pudding. I tried, but this is elaborate enough as it is. Everything else is in there though.

Ingredients

  • The Waffle: I love LB Belgian Waffle but the maple syrup just doesn't fit here. So we'll take FA Waffles Vanilla as a base. This flavor was a huge letdown for me initially. On it's own it's just too spicy and weird and not at all fluffy like a waffle would be. BUT that's where SSA Waffle with Butter comes in. It has everything FA's version is missing and vice versa.
  • The Cherry Compote: Now you might think the obvious answer is SSA Compote Cherry but you would be wrong. It sucks. After being thoroughly disappointed (again) I thought fuck it, I'll make my own cherry compote! And it turned out pretty damn good. INW Cherries on it's own is a pretty good (if artificial) flavor. It just needs help to go from Capri Sun to proper cherry. That's where FLV Boysenberry comes in. It gives it more of a dark body and adds that dark fruitiness that you would expect from a cherry. Lastly, FA Liquid Amber cooks it all down into a compote and kind of dulls that sharp, artificial edge that you usually get from cherry flavors.
  • The Extras: Pretty straight forward, some vanilla ice cream, some powdered sugar and a little (whipped) cream. I tried it with an actual whipped cream but this recipe has a lot going on already so FLV Cream just adds a little plain creaminess into the mix.

ADDITIONAL NOTES

  • Sweetener of course is up to you. I used 0.5% CAP Super Sweet.
  • Not enough cherry? You can up INW Cherries and FLV Boysenberry. Just be careful with the Boysenberry, as it can overtake the cherry very easily.
