A delicious light and fresh cake that is staple of Southern BBQ's. Layers of yellow cake infused with mandarin oranges are stacked with a fruity mixture of whipped topping, pineapple, vanilla instant pudding, and topped with sweet coconut.
I will probably sub out FW's Yellow Cake in the future, due to the Fructose. Thinking of using Flavor Jungle or River Flavors Yellow Cake. This is my first recipe so any advice or suggestions would be greatly appreciated.

I tried a pig lickin cake for the first time a couple of months ago. Seen this and gave it a try. I think you hit the profile. The Mandarin is up front with a creamy sweet filling and a nice lite cake in the background.
