So it turns out TPA papaya and INW cactus combined can pretty much turn into a bubblegum flavor. I add TPA Red Licorice to give more of that gum texture and adds more to the bubblegum flavor. Marshmallow helps round out the more tropical side of papaya. I'm not done with this recipe but I'm releasing this now in hope of getting some help with making the flavor a little louder. Could be as simple is going higher in the papaya and cactus but would like to see what others might have to contribute as well.
I was single flavor testing Zeppola last week and was starting to notice the "citrusy" off notes others have mentioned. For me this was actually more of a coconut like flavor, and reminded me of the crumb donuts I lived on in high school. so I decided to try and bring that out more with the coconut extra. I use the sugar cookie and graham cracker to try and get more of the crumb texture.
