Like the rest of this series, I'm going for a simple full flavored pineapple.
Pineapples. INW Pineapple and SSA Thai Pineapple make a great combo for reaching a rich pineapple flavor. WF Pineapple Candy gives the combo a contrasting candy note to support the main two.
MB Pineapple Lassi here is a further bolstering of the pineapple flavor, but also to lend a blending creamy note to help fill mouth feel. TPA Vanilla Swirl is used here in the same capacity.
After making a first version I realized it needed a bit of a sour bump, so I added VT Sour Lemon to give that just a little lift.
Add some sweetener and boom, we are off to the races. This recipe came together quick and I didn't try other pineapples. I knew INW and the MB played well together, but the SSA just adds a bump to the INW natural profile. I'm sure some of them can be subbed out.
This is great right off the shake, in a few days the creaminess is going to bloom and over take the pineapple for a bit. It really becomes a soft serve pineapple ice cream. Then the cream settles back down after a week or so and the pineapple comes forward again.
